Farro Salad with Goat Cheese and Marcona Almonds.

Late again…but that seems to be par for the course right now.

Ever have a day, (or week…), when you’re late for no explicable reason? Late to bus home, because you just had to get a dozen oysters and then you just had to top off lunch with a scoop or two of Cape Cod Mud and Peanut Butter Moosetracks? Ever been late to dinner because the walk through the elevated park, no matter how indirect, seemed all the more inviting compared to a couple block on an overheated, dirty sidewalk?

Late seems to be all up in the summer air, probably due to the fact that it’s summer, and there’s nothing better during summer than slowing down and taking your time getting from one thing to the next.

As it turns out, you’ll discover lovely water fountains and all different kinds of ice cream if you take care to be just a little late. Unfortunately, I can’t be late all the time. For example, to work. Gotta be prompt there. And nothing really crunches time in the morning like the prepping of coffee, breakfast, and lunch. Surprise, the antagonist here is food. Lovely, charismatic, delicious food, always making me late. Surprise number two: pasta salad to the rescue. Or rather, a bastardization of pasta salad filled with yummy whole grains, almonds, herbs, and goat cheese.

Healthy, can I?

Grain salads are my compromise with pasta salad. They taste good at all temperatures, and are earthy, nutty, and filling to boot. Add that to the fact that they last for days, and I’m sold. Pack a bit of farro salad in a Tupperware, and you’re ready for work. Nothing can get you down, or make you late, with marcona almonds and goat cheese on your side. Nothing that is, except a beautiful little bakery with the most perfect maple oat scones, a lake, shiny buildings, outdoor murals…

Late again, but at least you’ve got the perfect lunch packed.
