Poached Eggs with Slow Roasted Tomatoes and Baby Spinach.

Who said feeding yourself was hard?  Obviously the secret to decadent, fast meals is killer combinations and slow roasted tomatoes, the apparent jewel of the food kingdom.  Have you ever seen a food more beautiful, more succulently sweet?  There is no fairer slow-roasted food in the land.

Quite honestly, slow roasted tomatoes drive one to delirious ends.  They are that delicious.  Truthfully, they take four hours to make.  But that’s four hours of waiting, patiently, seated in front of the oven, watching low-temperature heat work its magic.  One can take the most atrocious, pale and pitiful tomatoes and turn them into the most perfect combination to absolutely anything.  Or just to eat, plain and with your hands.

Adding a poached egg and tossing the tomatoes with spinach, all that topping fried bread and creamy cheese, is the perfect setting for slow roasted tomatoes.  It takes less than 10 minutes, and the result is an incredibly elegant, rich meal.  I cannot take the credit—that belongs to my favorite bakery in Evanston, Fraiche—but I will rip off the idea.
