Shredded Chicken Tacos with Chipotle and Avocado.
Sometimes, food blogging, or really food photography, requires that you eat weird meals at weird times of the day. As a food blogger, you’ll cook dinner and lunch in the morning and bake and slice a mutli-tiered dessert around lunchtime. All for natural light and a nice photo. Take this morning for example, when I had chicken tacos with avocado and cotija for breakfast. At 8:30am. Definitely not a stack of pancakes. But having done this for a couple years, I think I’ve successfully broken any semblance of a breakfast-lunch-dinner mealtime order. As I like to think of it, I’ve extended brunch to all meals meaning that anything is fair game. Cookies for dinner, tacos for breakfast, donuts and salad around tea time. Maybe a milkshake and a smoked meat sandwich at snack time, and liverwurst before 11:00am.
And of course, nothing worth photographing after 4:00pm. After 4:00pm when the natural light goes down…it devolves into cheese, butter, and crackers.
Recipe for these tacos, which I would say are appropriate at all times of the day, here.

Mmmmm, these look fantastic…it has been way too long since I’ve made tacos; these look so tempting right now!
Yum. Have to try these!
Nothing’s as great as a taco in the middle of winter! Maybe with a margarita…
