I’ve long held that roasted beets are secretly candy. They are, after all, deceptively unnatural in color. And so, so sweet. It’s quite remarkable that anybody got duped into believing they are a vegetables. But whoever that great dietary con artist was, I have them to thank for this salad. Because not only does it contain dirt candy pioneer roasted beet, but roasted parsnips as well which are equally confusing in their sweet, earthy flavor. Throw in some capers, a shallot, an endive, and some blue cheese and it’s really quite a wonderful salad. Sweet, savory, and comforting for the beginning of the year. Recipe here.
