Sweet Potato Latke.

So I’d never thought I’d admit it, let alone even think these words but in this latke-instance…baked is better than fried. These potato-sweet potato latkes are wonderful…and they’re even better baked than fried. Granted, they’re baked in a with butter, olive oil, and garlic, but still. Who could have imagined the wonderful roasted caramelized sweetness potato pancakes take on when they’re baked? Clearly, someone with a bit more foresight than I.
