Goat Cheese Brownies
10 oz. bittersweet chocolate
½ cup, (1 stick), unsalted butter
1 cup white sugar
½ cup dark brown sugar, packed
1 teaspoon salt
1 teaspoon pure vanilla extract
4 eggs
1 cup flour
6 oz. goat cheese, room temperature
1 egg
1 tablespoon flour
1 tablespoon sour cream
1. Preheat oven to 350 degrees Fahrenheit. In the top of a double boiler, melt the chocolate and butter together, stirring to combine. Remove from heat and stir in the sugars, salt, and vanilla. Break the eggs into the mixture one at a time, stirring after each addition. Add the cup of flour and fold together until the batter is thick and glossy. Set aside.
2. Crumble the room temperature goat cheese into a medium-sized bowl. Add the egg and stir until combined. Add the flour and sour cream and mix until mixed together.
3. Lay 2/3 of the brownie batter into the bottom of a 9×13 inch-baking pan, spreading the batter into an even layer. Drop the goat cheese mixture onto the batter layer in even blobs. Spread the goat cheese as well as possible, without pushing the mixture all the way to the bottom of the pan and combining the layers. Spread the remaining brownie batter on top of the goat cheese layer, making sure not to thoroughly mix the layers. Bake for 40-50 minutes or until the top of the brownies look dry and cracked and a tester inserted into the center comes out clean. Don’t worry about over-baking; the brownies will be very fudgy regardless of a clean tester!
