Edamame Hummus

Inspired by the brilliant Trader Joe

20 oz. shelled, cooked and thawed frozen edamame (buy a bag of frozen, shelled and blanched edamame, thaw and then use that)

½ cup tahini

4 garlic cloves

Juice from one lemon (about 3-4 tablespoons)

2 tablespoons sesame oil

1 teaspoon white sugar

Siracha/chili paste to taste

Chili oil to taste

Salt and pepper to taste

1.  Put the edamame, garlic, tahini, lemon juice, sesame oil, sugar and a bit of the chili oil, chili paste and salt and pepper in the bowl of a food processor.  Process until smooth and then season to taste with more chili paste, chili oil, salt and pepper.  Refrigerate when not eating.  Good everywhere hummus is.
