Inspired by the Big Cheese truck
The one thing my Big Cheese experience needed was a little more filling. The grilled cheese offers the perfect balance of bread, cheese, and fillings, however every once in a while I like an overkill grilled cheese with a little bit of height. The proportions in the sandwich have been adjusted for just such verticality.
Makes one sandwich
2 slices multigrain bread
4 oz. of artisan triple crème Brie, slice
½ of a Fiji apple, thinly sliced
2 tablespoons unsalted butter
1. Preheat the oven to 350 degrees Fahrenheit. Melt the butter in a frying pan over medium heat. Layer the sandwich with the Brie and apple slices. Toast the sandwich in the butter until the bread is a dark golden, about 2-3 minutes a side. Move the grilled cheese to an ovenproof plate and warm in the oven until the cheese is completely melted, an additional 2-3 minutes. Slice and eat immediately. Goes great with tomato soup.
