Enchiladas Suizas? Two enchiladas filled with ripe avocado and sour cream chicken, topped off or rather drowned in a sweet, spicy, and multi-layered mole poblano. And cheese. Delicious yes, just as delicious as all the other items everyone else in the packed restaurant were eating.
My mom went with the infamous mole negro. Not so secretly, she is a fan of the Food Network show Diners, Drive-ins, and Dives, so this road trip provided the perfect excuse for her to try some of those very, Diners, Drive-ins, and Dives. (I should alliterate more. To come.) The 18 ingredient mole negro—learned from Guy Fieri—was spicy first, and incredibly complex. It was a mistake, perhaps, for us to consume our food in less than 10 minutes. But we were hungry. Sitting for 10 plus hours is hard. All that exercise works up an appetite.
