Roasted Beets and Goat Cheese Croquettes, where have you been? You require very little time, hardly any ingredients, and absolutely no effort. The actual input of effort in relation to delicious outcome is so little, I can’t even remember entering the kitchen. All I have is a blank bit in my memory, followed by two plates of food perfection.
Beets, you’re pretty. And better yet, you’re tasty. If any root vegetable were to be candy, it would be you. Sweet, firm, earthy, and in rainbow colors to boot. And Goat Cheese Croquettes—fried cheese? —how to make you more delicious? Oh yeah, let’s drizzle some crystallized clover honey over you and some caramelized shallots so the sweet, the tangy, and the fat can all marry together on the plate. Or in my stomach. Yes, most definitely in my stomach.
Now, although I was tempted, so tempted, to tower the beets and the croquettes together in a Jenga-esque defiance of height, I didn’t. I decided to savor these two dishes separately. Though that’s not to say a tower of fried cheese and beets would necessarily be a bad thing.
No, definitely a good thing.
